Treat Dad to the at Home Cinema Experience this Father's Day
When I wrote this blog a year a ago it never crossed my mind for a second that we could possibly be celebrating another Fathers Day in lockdown, yet here we are...
Although we will not be celebrating the special men in our lives in the ways we may have originally planned, with extended family gathering for long lunches or brunch at Dad's favourite cafe, we can still make Dad's day special.
In this blog I will share with you my tips for creating a memorable Father's Day at home cinema experience in your very own home.

If you are lucky enough to have young children living at home like me (or if you just love a good movie night) you might find some joy in creating this at home cinema experience for the special man in your life. Our little family enjoys this tradition weekly minus the choc tops and trail mix (they are reserved for special occasions, or for Mummy to enjoy when the kids go to bed ;)) and it has become a beautiful tradition that we all look forward to at the end of a long week (and we all need something to look forward to at the moment). I hope this brings some joy to you to!
Homemade pizza dough recipe

Place the yeast and water in a small jug and mix together.

Leave the yeast mixture for a few minutes until it forms some bubbles.

Place the flour and salt in the bowl of your mix master and make a well in the centre (hole) then add the yeast mixture.

Turn your mix master on to a medium speed and mix for 4 minutes or until a smooth ball forms. If you do not have a mix master you can knead the dough by hand - I have never done this as I am spoilt with a magical machine that does the hard work for me but I would say this might take approximately 6-8 minutes.

Remove the dough from the mix master and place in a lightly oiled bowl covered with cling wrap followed by a tea towel (we like to joke that we are putting the dough to bed).

Find a nice warm place in your home to rest your dough and leave for a minimum of 2 hours to prove (double in size)

When your dough is ready portion out into the amount of pizzas you would like and roll into balls (this makes it easier to roll out). This recipe will make enough dough for two large pizzas or one large pizza with three small mini sizes pizzas for the kids (this is especially great for fussy eaters who are not happy to simply pick off what they don't like).

Preheat your oven to very hot (approx 220 degrees celsius).

Roll your pizza dough out onto your pizza trays (I have been known to use the back of a cookie tray in the past so it's not a big deal if you don't have pizza trays) and add your pizza sauce, passata or tomato paste first followed by your favourite pizza toppings. (My fave toppings include olives, artichokes and bocconcini)

Place in the oven and cook for 15 minutes or until the base is cooked through.

Serve and enjoy while watching your fave family movie.
Choc Top Ice Cream Cones

Scoop the ice cream into each ice cream cone then leave to freeze for a minimum of 6 hours.

Once the ice creams feel solid and frozen hard you are ready to make your chocolate topping. N.B if your ice creams are not frozen solid your chocolate topping will not stick to the ice cream.

In a saucepan melt your chocolate and coconut oil together. The ratio I use is 1 cup of chocolate to 1 tablespoon of coconut oil but you might like to adjust this to your taste.

Leave the chocolate mixture to cool slightly then gently place your ice cream cones upside down into the chocolate mixture making sure to cover the top and and a couple of millimetres of the top of the ice cream cones to seal the ice cream in.

Working quickly before the topping hardens, place a single lolly on top for decoration then place in the freezer until ready to be eaten.
